Healthy vegan pita pockets with a delicious Cashew nut sauce.

These vegan pita pockets are delicious healthy and easy for a midweek dinner.

ll you need is

Vegan pita bread (check the package as not all pitas are vegan)

 filling

  • diced tomatoes
  • diced avocado
  • diced red or yellow bell pepper
  • diced cucumber
  • sprouts (i like the radish or onion sprouts)
  • handful leafy spinach

you can also use, sweetcorn, mushrooms or rocket

for the cashew sauce

  • 1/2 cup of cashew nuts
  • juice from 1 lemon
  • 1-2 inches of raw peeled courgette
  • 1 garlic clove
  • 2-3 spoons of water
  • pinch of cayenne powder (to taste)
  • pepper to taste
  • Salt to taste (but not if the cashew nuts are already salty)

Blend all the ingredients for the sauce in a blender until you have a smooth sauce.
