These vegan pita pockets are delicious healthy and easy for a midweek dinner.
ll you need is
Vegan pita bread (check the package as not all pitas are vegan)
filling
- diced tomatoes
- diced avocado
- diced red or yellow bell pepper
- diced cucumber
- sprouts (i like the radish or onion sprouts)
- handful leafy spinach
you can also use, sweetcorn, mushrooms or rocket
for the cashew sauce
- 1/2 cup of cashew nuts
- juice from 1 lemon
- 1-2 inches of raw peeled courgette
- 1 garlic clove
- 2-3 spoons of water
- pinch of cayenne powder (to taste)
- pepper to taste
- Salt to taste (but not if the cashew nuts are already salty)
Blend all the ingredients for the sauce in a blender until you have a smooth sauce.
