Tasty raw vegan wraps with spicy cashew sauce



  • Collard leafs or large lettuce leaves

You might want to thin the stem of your collard leaf with a knife so it folds easier.

For filling

  • 2 Tomatoes
  • 1/2 Red pepper
  • 1 Avocado
  • 2 inch Cucumber
  • Onion sprouts ( or other sprouts)

cut all into small pieces

For the sauce

  • 1/2 cup cashew nuts
  • Lemon juice 1-2 spoons
  • Cayenne pepper to taste
  • 1.5 inch courgette
  • Little water
  • 1 Garlic clove

Mix in a food processor and pour over your diced vegetable mix.

Fold your wrap and enjoy
