Lebanese lemon and bean salad

This Lebanese bean salad is quick, easy, fresh and so delicious, perfect for lunch and a great dish to take to work.

Ingredients

  • 1 can kidney red beans
  • 1can chickpeas
  • Small Red onion
  • 1/4 Celery stick
  • 1-2 tomatoes
  • 1/2 cucumber
  • Fresh parsley
  • Fresh mint
  • 1/4 cup virgin olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic
  • Seasoning

Mix your olive oil with the lemon juice, seasoning and garlic and set aside. In a large bowl add your beans and all your diced vegetables, add your lemon and oil mixture, toss and serve. Or save for next day lunch. So easy.

Eat as a side salad or in a pitta bread with hummus and rocket salad.  one of my favorite summer lunch dishes.
